They like peanut butter!! And bread! Used to bait the barn traps when I was a tyke with it. (Sorry but it was them or my animals feed.) They dont favor cheese that much.

Incidentally, having an open honey container on the bench that a mouse could easily knock over and spill everywhere and then get stuck in and struggle until morning when we humans get an interesting surpise is also a good way of trapping them.
