Since my two new little ones aren't eating veggies yet, how can I be sure they are getting enough Vit. C.?

There will be vitamin C added to the pellets, so they should be fine even if they're not eating veg.
I've never used supplements, but if you'd feel happier using one for a while, I'm sure someone will be able to give you tips on what to go for.

I use cherry tomatoes and segments of oranges for extra C. It's probably not important, but just in case. They only need a bit, which is why the cherry tomatoes work. One per pig per day. If using oranges, cut up one segment and give each half. If they'll eat it, of course. Usually they get enough from the pellets, as Bean said, but if you're concerned, it's best to give them small amounts through fruits and veggies. Don't use the supplements that go in the water. There is a C tablet made by Oxbow. Some people have great luck getting their pigs to eat it. I never have. This is a great reference for which fruits and veggies have which nutrients. Like Bean said, many pellets are supplemented with mineral vitamin C or infused with it via natural foods (orange juice, peels, etc.). I get mine from people called Small Pet Select (the premium guinea pig blend pellet ones) and find those work great plus my vet says its a good choice for guineas because of the vit c content in it.

I tried the supplements in my piggies water before but they didn't like it, I just give them a few orange slices once a week and they're perfectly happy!

I am learning SO MUCH here. I didn't know pellets needed to be stored in an airtight container. I have put my new pack of Oxbow Young Guinea Pig pellets in a sealed container.

Also, since the nutrients leach out into the air, use a small pellet bowl, so they tend to eat all the pellets within a day or two. I bought some large bowls that held about a weeks worth of pellets, before I learned this, and had to get new bowls.
