Excellent! I usually try a recipe as is, first, then make the tweaks, so totally understand. Sounds as if you have some good recipes to make your own Our Independence Day is Sunday, so we'll get more pork ribs, Friday, so I can get those rubbed and ready to grill on Sunday. It's probably our favorite dish. I'll make salad and veggies to go with it

I've tried several bean burger recipes, and I can't get them to stay together like burgers? I would really like to figure out what I'm doing wrong, as I like bean burgers, but not when they're TexMex'd to death, so want to make my own. Enjoy

I find whizzing the beans in a food processor helps make the mixture sticky. I pop an egg in and normally use flour to bind it together, but was out of flour last night so used polenta and that worked well. (I've switched to using this when I'm making pizzas on the advice of my friend with the pizza oven as it stops the dough sticking much better!) I also find using a burger press makes them more solid (and look neater), but if it's just us four, I often just form them by hand as it's quicker. I grate veg in and do find courgette is the best at keeping them moist, but I try to grate it in when no one is looking as despite everyone enjoying the burgers just as I make them (which is different every time depending on what I have in), they'll always complain about me adding courgette!

Daughter's best friend growing up lived a street away from us, and her mother always grew an endless supply of zucchini in the summer, and they had zucchini everything. The daughter loved to come to our house to eat, as we didn't serve zucchini in a variety of forms, for our meals, lol Daughter got totally turned off to zucchini eating it at her friends house so often. I don't think she disliked it, as much as just got really tired of it. Spinach was another of daughter's peeves, even if she couldn't tell it was in the dish. I made quiche with peas, ham, spinach, red peppers and a bunch of other things, which she loved, until she learned there was spinach in it. Then she acted as if I'd totally mislead her into eating poison As hubby says, we get to eat like adults, now I just bought some baby spinach, baby kale, and some baby other things to mix with the romaine lettuce, for my salads. Hubby has to be really careful with all those dark leafy greens, so he'll get a limited amount. I eat it every noon for my lunch, and love it He'd rather have meat, anyway, so salad is secondary for him. We have a lot of pork to cook/eat this weekend, so we're having ground beef for dinner. I'm making a 1 lb burger, which we can cut into segments. I certainly don't want 1/2 lb of it, but it's easier to make a big burger than to separate it into 3 burgers. I never get them equal. I'll try the bean burgers again, and try your tricks. I know hubby won't be the least bit interested, but he'll try them just to keep me off his case. Refer back to that "He'd rather have meat..." statement He's afraid, if he likes the veggie food, I'll stop using meat at all. I won't, but if he weren't here, I'd skip the meat completely.

But then spotted something that he thought was grated courgette (it was) and was jokingly saying 'This had better not be courgette in here! I hate courgette! Don't ruin falafel with courgette!'. I can't help myself!

My wife and I thought it might be a good idea to visit a restaurant today... but it was not.
We went to a Chinese restaurant we had visited once before the pandemic hit, and the service was rotten. Our server gave us one menu, one napkin, and acted as if we were an enormous inconvenience. As it happened, we were the only ones in the restaurant when we arrived. My wife argued with this girl for a minute, and I asked if she wanted to go elsewhere, but she didn't want the hassle of looking elsewhere.
The food was not bad at all, and my wife gave the server a five per cent tip. Given that she's sometimes left no tip for particularly horrid servers, I considered that generous.
On a side note, it takes a lot for us not to leave a tip, or a small one. The server has to have an unprofessional attitude for us to be offended. It's okay if they're having a rough time that night and make mistakes; I've seen it before and am very forgiving. But, if you act like the customer is a bad thing, then let's see you get on by without them!

Last time we went out, our waitress was very lovely and efficient. But every time we'd say an item we were ordering she'd reply 'Awesome!' (with a massive smile as if we'd just told her she'd won the lottery) and if we asked to adapt anything or ordered extra, she'd say 'No worries!' (with that same beaming and grateful smile) - she seemed very happy in her job!

Even if they're just pretending, if they can make me think they care, that's enough for me! (Although I'm sure there are loads of people in the service industry who genuinely like their jobs & the majority of the people they encounter.) My parents have a few restaurants they liked to visit (pre-pandemic, of course) and those places had certain waiters that my parents insisted on having, as their customer service levels were off the charts! One man in particular never wrote down any orders- he didn't need to- and when he served the food, he ALWAYS got everything correct!

Sorry your first attempt at restaurant normalcy was lousy. Five percent is probably more than she deserved, but we do know what percent through before we arrived. It's worth sending a note to owner, as the owner may not know she's having such a hard time. Or she could just hate her job, and take it out on the customers, which also needs to be addressed. I don't there are so many people beating down the doors for waitstaff jobs, that she would get fired. I made some no-bake cookies for our Independence day meal. Red velvet with a cream cheese drizzle. My drizzle is a little messy 🤗 BBQ pork ribs and cole slaw for dinner. The rain stopped after 3.67 inches, so hubby is set to grill 🤗

They sound/ look good! I think I'm a similar style of icer to you... The difference is I can't make it look elegant if I try and I bet you can!
We don't tend to eat out enough at the same places to get to know the waiting staff. But when we go to our local Indian restaurant, we always get served by the manager because of my food intolerances, as I can't have anything off the menu. He's great - so cheerful and can't do enough for you, he genuinely makes me feel like he's excited by the chance to make me a tasty meal based on what I fancy eating that day, and takes pleasure in helping to make sure we have a great evening. Much better than the manager at a pub we ate at, who banged his head on the bar repeatedly when I said I couldn't eat garlic or onions! He was trying to be funny, but it just made me feel like a pain in the jacksy.

It's not really productive to try to be funny about a condition that makes it hard for someone to do something. Even trying to make lite of it seems in poor taste, at least to me. Acknowledge it, honestly work with the person on what can be done to address it, have a happy customer, and get your name spread as a good place/good people. It's just not that hard. The icing comes in those nuggets that have to be microwaved or heated in a double boiler until they melt to the right consistency. By the time I get them out of the microwave, they've started to cool down, and since I don't want to just pour them over the cookies, taking the time to drizzle over by the spoonful means it cools down more and more. I have to find a better way, but don't make these cookies often enough to really thing about it. I do have a couple more boxes of flavors to try, and might come up with something better They are cookie dough cookies, so soft and chewy, need to be in the fridge.

It's hard to find certain items at the store right now, so I'm browsing other options. On Saturdays I enjoy a bagel with salmon spread on it for breakfast- but when looking for salmon spread I noticed that all the brands & selections I like were out of stock. On a whim, I picked up a tiny tub of Tillamook cream cheese with cheddar flavoring... ...looks like stepping out of one's comfort zone paid off. It's quite delicious! I tried some on a bagel tonight with supper, and it was most satisfying.

Glad your swap hit the spot - I love fish but fishy breakfasts just don't appeal to me.
We're having supply issues with some products - some seem to be general supply issues, but I've noticed other things you can get at some shops and not others. Still plenty of food around though, that's for sure!

I've noticed some holes in supplies here, too. It's difficult having some food restrictions, and not being able to find the versions I can eat.

No sooner did I find an alternate to my bagel spread then another issue: They are OUT of my alternate! Now all they have is plain cream cheese, or blends with strawberries or vegetables. Sigh... I don't mind stepping out of my comfort zone on occasion, but I don't want a sweet spread, (cinnamon is another option I'd rather not go into right now) and vegetables for breakfast don't appeal to me too much. My current supply should last another week. Maybe they'll be in stock again by that time. I suppose I could do regular cream cheese, but that's so boring to my palate now! (First World Problems.)

I'm only aware of cream cheese with herbs/ garlic, I wonder if we have all these products?! Actually I can check seeing as I shop online.... There's one with chilli and one in a tube with ham (most of them are in tubs, so this seemed weird!), but the rest are just herbs/ garlic.
Have you thought about getting the plain cream cheese and creating your own spread?! You might make such excellent creations you can create your own flavoured cream cheese business!

I was going to suggest that. Check the ingredients on the cream cheese. The quantity is in order. Biggest ingredient first. Instead of saying cream cheese, the ingredients for the cream cheese are probably listed. You just need cream cheese. I hope you can find one of your favorites, before you run out.

My bagel spread with salmon is back in stock, but now I'm hooked on plain cream cheese with bits of shredded cheddar on top! I did buy a small tub of salmon, but I think I'll go back to my secondary choice; it does seem to fill me up more in the morning. Again, first world problems.
